Summary

Apples cv. Gala were stored in controlled atmosphere chambers for 8.5 months under various conditions: RH or CO2 content in the atmosphere. The storage temperature, measured in the flesh of the fruit, was 1 °C. After 8.5 months of storage, low RH during the first or last 3 months of storage did not affect flesh firmness or decay. The initial high CO2 treatment as well as high CO2 throughout the storage period decreased titratable acidity and increased decay.
