Summary

A METHOD FOR THE QUANTITATIVE ASSESSMENT OF QUALITY DECREASE (LOSS OF STORAGE SUITABILITY) OF FISH DURING CHILLING, FREEZING AND SUBSEQUENT STORAGE IS DISCUSSED. DATA ARE GIVEN FOR THE ANALYSIS AND THE SELECTION OF RATIONAL TECHNOLOGICAL SOLUTIONS. THE RESULTS ARE GIVEN IN NOMOGRAPHS FOR THE QUICK EVALUATION OF THE LOSS OF STORAGE QUALITY AND THE POSSIBLE STORAGE LIFE OF FISH AT 303-223 K (30 TO -50 DEG C).
