Summary

The methods used to isolate Listeria monocytogenes include the cold incubation of samples, the use of oblique light to examine the colour of colonies, the use of media of selective enrichment and of plate media, and of molecular biology. All these methods present serious drawbacks. The article proposes a rapid detection method which consists of the enrichment in L-Palcam broth and in a further identification of Listeria contaminating a raw and smoked sausage, by applying the API test. With this rapid method, it has been possible to reduce the testing time from 4 to 2 days, compared to existing technologies.
