THE AUTHOR STUDIES THE ACTUAL POTENTIALITIES OF ESTABLISHING A COLD CHAIN FROM THE PRODUCTION TO THE CONSUMPTION OF ANIMAL AND VEGETABLE FOODSTUFFS. THEIR STORAGE AND TRANSPORT PROCESSES ARE ESPECIALLY REPORTED. THE TECHNIQUES TO BE USED ARE PRACTICALLY THE SAME AS IN TEMPERATE COUNTRIES, FOLLOWING THE RECOMMENDATIONS OF THE INTERNATIONAL INSTITUTE OF REFRIGERATION (TWO TABLES SUMMARISE THE PRACTICAL STORAGE LIFE OF COOLED AND FROZEN PRODUCTS). DUE TO THE REQUIREMENT, IN HOT COUNTRIES, TO MAINTAIN DIFFERENT KINDS OF FOODSTUFFS IN THE SAME COLD ROOM, A SPECIAL TABLE SHOWS THE POSSIBLE COMPATIBILITY OF THEIR COMMON STORAGE. G.G.
