Summary
Vegetables and fruit as living products have particular requirements concerning refrigerated storage. Temperature, humidity, air velocity and composition of the atmosphere affect respiration and transpiration of stored commodities. Cooling down quickly to an optimal temperature level and the minimization of humidity losses are of great importance for the keeping quality. The economy of a cold store is significantly ameliorated by an effective filling of the store, it is thus worthwhile investing in some logistics management.
