REFRIGERATION AND FOOD PROCESSING TO ENSURE THE NUTRITION OF THE GROWING WORLD POPULATION.

Author(s) : MATTAROLO L.

Summary

THE WORLD POPULATION IS STILL INCREASING (2.5 BILLIONS IN 1950, 5.2 IN 1990, AND 8 IN 2025). THE NUMBER OF INHABITANTS IN DEVELOPING COUNTRIES INCREASES MORE RAPIDLY THAN IN DEVELOPED COUNTRIES (RATIO BETWEEN BOTH POPULATIONS WAS 2 IN 1950, 3.3 IN 1990, AND IS EXPECTED TO BE 4.9 IN 2025). IT IS NECESSARY TO AUGMENT FOOD PRODUCTION (CULTIVATED SURFACES, GENETICS, PRODUCTIVITY) AND, AS A RESULT, THE ENERGY COST INCREASES. REFRIGERATION REDUCES LOSSES BY 20 TO 45 %, DEPENDING ON COUNTRY. OVERALL, ONLY 20 % OFFOODSTUFFS ARE TREATED. REFRIGERATION IS INDISPENSABLE, AND IT IS NECESSARY TO TRAIN EXPERTS IN THIS FIELD.
