Summary

THE PRESSURE COOLING PROCESS (LESS THAN 2 HOURS) IS AN EFFICIENT WAY OF IMPROVING THE SHELF LIFE OF MUSHROOMS. THE METHODS OF MEASUREMENT ARE DESCRIBED TOGETHER WITH THE USE OF THE THERMAL PROPERTIES OF MUSHROOMS TO CALCULATE THE ENERGY REQUIREMENT FOR COOLING. THE MUSHROOMS, PACKED IN CARTONS, ARE COOLED BY AN AIR FLOW OF 3 TO 29 M3/H. THE PROPERTIES MEASURED ARE: THE COOLING COEFFICIENT, THE THERMAL LAG FACTOR, THE SEVEN-EIGHTHS COOLING TIME, THE HEAT EFFECTIVE TRANSFER COEFFICIENT AND THE BIOT NUMBER.
