Summary

The article studies the cooling of the Kontoula pear as a function of the air speed and the type of packaging. At various air speeds (0.2 to 4.5 m/s) and for six types of commonly used packaging, the cooling speed is presented and correlated as a function of the air speed. Raising the air speed from 0.2 (average speed for storage) to 1.5 m/s can reduce pre-cooling time by 3 to 6 times by limiting it to 1.5 hours; raising the speed beyond 2 m/s is ineffective and without value in practice.
