THE INEVITABLE, FREQUENT DOOR OPENINGS DURING DISTRIBUTION COMPROMISE THIS CRUCIAL, AND YET WEAKEST, LINK IN THE COLD CHAIN. THE AUTHOR SHOWS HOW THE TEMPERATURE INSIDE IS AFFECTED, GIVES SUGGESTIONS FOR LIMITING THE RISKS, AND PRESENTS THE VARIOUS STANDARDS AND REGULATIONS. THERE ARE SPECIAL PROBLEMS INVOLVED WITH NARROW TRUCKS, SIMULTANEOUS FREEZING AND COOLING, HANGING MEAT AND DIRECT SUNLIGHT, AS WELL AS IN LOADING TWO PALLETS SIDE-BY-SIDE AND RECOVERING EMPTY PACKAGING.
