Summary

THREE ELASTICITY INDICES ARE PROPOSED TO CHARACTERIZE THE SUSCEPTIBILITY TO MECHANICAL INJURY OF GOLDEN DELICIOUS AND STARKRIMSON APPLES. THEIR DEVELOPMENT IS STUDIED DURING A 14 WEEKS' STORAGE. IT IS COMPARED WITH THE CHANGE IN FLESH FIRMNESS, MEASURED WITH A PENETROMETER. THE ELASTICITY THEORY, ALTHOUGH CONSTITUTING AN APPROXIMATE SOLUTION PERMITS CALCULATION OF THE MAXIMUM RESISTANCE OF THE FRUIT TO EXTERNAL CONSTRAINTS. THE ELASTICITY INDICES ARE CALCULATED FROM THE DIAMETER OF THE IMPACT SURFACE AND FROM THE DEPTH OF THE BRUISES.
