Summary

THE CHANGE IN TEXTURAL PARAMETERS OF GOLDEN DELICIOUS AND RED BOSKOOP APPLES, HARVESTED AT VARIOUS DATES, WAS MEASURED AS A FUNCTION OF THE STORAGE TIME. AN UNIAXIAL COMPRESSION TEST AND A NON DESTRUCTIVE DYNAMIC RESONANCE TEST WERE USED. A STIFFNESS COEFFICIENT WAS CALCULATED FROM THE APPLE MASS AND THE RESONANCE FREQUENCY OF THE SPHEROIDAL VIBRATION MODE. THE VALUE OF THIS STIFFNESS COEFFICIENT SHOWED A SHARP DECLINE AT THE STORAGE TIME WHEN THE FRUIT REACHED ITS MATURITY CLIMACTERIUM AS DETERMINED BY THE ACTIVITY OF THE MALIC ENZYME. HENCE, THE STIFFNESS COEFFICIENT SEEMED TO BE A USEFUL PARAMETER TO DETERMINE THE FRUIT ACCEPTABILITY TO THE CONSUMER.
