THE PAPER ADDRESSES THE INTER-ACTION BETWEEN THE RESEARCH AND LEGISLATION IN THE AREA OF REFRIGERATION. IN THE UK THERE IS NO SPECIFIC LEGISLATION CONTROLLING THE PRODUCTION AND SALE OF CHILLED FOODS. EC LEGISLATION, INTERNATIONAL AGREEMENTS AND CODES OF PRACTICE ALL INFLUENCE THE CURRENT PRACTICE IN THE UK. THE IIR PUBLICATIONS CONTAIN A WEALTH OF INFORMATION AND GOOD SCIENTIFIC ADVICE IN THEIR RECOMMENDATIONS. THE PROBLEMS AND DANGERS OF TRANSLATING THE RECOMMENDATIONS UNDER IDEAL CONDITIONS TO THE < REAL > SITUATION ARE DESCRIBED, WITH PARTICULAR ATTENTION TO THE THIRD WORLD. LEGISLATORS SHOULD FEEL THAT THEY ARE ABLE TO SEEK EXPERT ADVICE ON THE APPLICATION OF THE IIR RECOMMENDATIONS.
