Summary

RESEARCH WORK CARRIED OUT DURING 1986-1987 SHOWED THAT BROWNING IN AFUZ-ALI GRAPES IS CONNECTED WITH THEIR ADVANCED MATURITY AND EXCESSIVE WATER LOSS. THE BROWN TISSUES BECOME FLATTENED CELLS WITH A DAMAGED ULTRASTRUCTURE. THE INTENSITY OF THE RESPIRATION PROCESS IN THESE CELLS IS LOWER AND THE ELECTRICAL CONDUCTIVITY AND PEROXIDE ACTIVITY IS HIGHER. THE CHARACTERISTIC COLOUR IS DUE TO THE BUILD UP OF SOME COMPLEX SUBSTANCES IN THE VACUOLES RESULTING FROM THE POLYMERIZATION OF COMPLEX SUBSTANCES. THESE SUBSTANCES ARE ASSOCIATED WITH SOME MINERAL IONS OR OTHER CHEMICAL COMPOUNDS.
