Summary

Eight apple varieties were stored at various oxygen concentrations, and respiration and ethylene concentrations were determined after 4-5 days. Elstar and Jonagold showed the highest carbon dioxide production and oxygen uptake, while Fuji and Boskoop showed the lowest. Ethylene production was severely reduced with decreased oxygen concentrations, and it was not possible to detect ethylene at oxygen concentrations of lower than 2.5%.
