Summary

The possibility of determining the optimal shelf life of crumbed and packaged beef rump steaks and minced meat at O - 2 °C under modified atmosphere (30% CO2 - 70% O2) was studied. The shelf life of the two products was found to be ten days, although the nature of the minced beef may suggest a shorter shelf life for the latter product.
