Summary

The glass transition and softening temperatures have been determined by DTA for the pseudo-ternary systems water-sucrose-hydrolysed gelatin and water-sucrose-peptone. Solid-liquid state diagrams describing the glass transition, and softening, temperatures, and composition of the maximally freeze-concentrated solutions as a function of the composition of the initial solution were constructed and represented in a graphical form.
