Vitamin C, riboflavine, thiamin, calcium, magnesium, potassium, sodium, iron, and fiber content of the above products are assessed. The samples cooked in water under optimal conditions have similar nutrient content to those of quick frozen vegetables and higher than those of canned vegetables.
