TESTS ON LIPOLYSIS WERE CARRIED OUT AT THE AMBIENT TEMPERATURE: 288 K (15 DEG C) UPON AN AVERAGE AND AT 277 K (4 DEG C) + OR -1 K. THE DEVELOPMENT OF SPONTANEOUS LIPOLYSIS AT 277 K WAS STUDIED IN TERMS OF THE HOLDING TIME OF MILK AT THE AMBIENT TEMPERATURE PRIOR TO COOLING. THE RESULTS SHOW A DECREASE IN THE HYDROLYSIS OF FREE FATTY ACID DURING INCUBATION, IN SPITE OF THE EXCESS TRIGLYCERIDE SUBSTRATE. SPONTANEOUS LIPOLYSIS AT 288 K IS MORE ACTIVE THAN THAT OBSERVED AT 277 K. A DELAY IN LIPOLYSIS IS OBSERVED IN MILK STORED 3 HRS AT 288 K PRIOR TO COOLING. PRACTICALLY THE STORAGE OF MILK FOR 3 HRS AT THE AMBIENT TEMPERATURE MAY CONTRIBUTE TO CONTROL LIPOLYSIS IN MILK.
