PRELIMINARY ACCOUNT OF STUDIES CARRIED OUT BY THE INSTITUT TECHNIQUE DES PRODUITS LAITIERS CAPRINS (ITPLC, SURGERES, FRANCE), TO OPTIMISE THE FREEZING AND THAWING TECHNOLOGY OF GOAT'S MILK WHICH HAS BEEN CONCENTRATEDBY ULTRAFILTRATION. THE OBJECT OF ULTRAFILTRATION IS TO LEVEL OUT THE SEASONAL PRODUCTION OF GOAT'S MILK.
