Summary

The article reviews the arrival of standardisation for French food, the most prominent example of which is the "NF Agro-alimentaire" label on smoked salmon. A strategic agro-food orientation committee that is increasingly recognised by all agricultural sectors has led such initiatives as the following: developing guides to good practice for applying European directives or HACCP; research into the factory of the future or the conditions for raising and slaughtering of animals; and the transformation of codes of practice into standards.
