Summary

THE CHILLING OF HORSE MACKEREL, OF PICAREL (SPICARA SPP) AND OF BOGUE (BOOPS BOOPS L) IN ICE OR IN REFRIGERATED SEA WATER WAS STUDIED. BETWEEN 6 AND 10 HOURS AFTER CATCHING, THE LOTS CHILLED IN REFRIGERATED SEA WATER WERE STORED FOR 11 DAYS IN BOXES CONTAINING ICE. AT THE END OF THIS PERIOD, ALL LOTS WERE EDIBLE. ONLY HORSE MACKEREL CHILLED IN REFRIGERATED SEA WATER WAS EDIBLE ACCORDING TO RESULTS OF SENSORY TESTS. UNDER THE CONDITIONS OF THE EXPERIMENT, IT APPEARS THERE IS NO SIGNIFICANT DIFFERENCE BETWEEN THE 2 ON-BOARD CHILLING SYSTEMS STUDIED.
