RECOMMENDED CONDITIONS ARE GIVEN FOR THE CATCH (OPTIMAL FISH SIZE, TEMPERATURE OF CHILLED SEA WATER), FOR PROCESSING (SIZE OF BLOCK FORMS, FILLETING METHODS) AND FOR STORAGE (KEEPING TIME). KEEPING THE FISH IN CHILLED SEA WATER: 276-281K (3-8 DEG C) UP TO 3 HOURS, FOR EXAMPLE, INCREASES THE QUANTITY OF FISH WITH SOFT AND FLESHY CONSISTENCY BY 15-22%. KEEPING TIME FOR FROZEN FILLETS STORED AT 255 K (-18 DEG C) IS 4 MON M. C.
