Summary

Samples of rice (dried with hot or cold air, milled or polished) were stored for one year at temperatures from ambience to 5 deg C. Chemical analyses were carried out on fats, acidity, and reducing sugars, with the view to evaluate the quality of the different samples. The best results are obtained with polished rice, which has been dried at ambient air and stored at low temperature (5 deg C).
