A CRYOMICROSCOPE WAS USED FOR THE STUDY OF THE FREEZING AND THAWING OF PEAR CELLS AT VARIOUS COOLING AND HEATING RATES. THE ANALYSIS OF A VIDEO RECORDING OF THESE PROCESSES ENABLES ONE TO ESTIMATE THE WATER LOSS FROM CELLS AND IT STRESSES THE DIFFERENCES BETWEEN FAST AND SLOW FREEZING.
