Summary

THE EFFECT OF THE FREEZING AND FROZEN STORAGE OF FISH OF THE SEBASTES SPECIES WAS EVALUATED AT 268, 261 AND 253 K (-5, -12 AND -20 DEG C). A NEW TECHNIQUE, ISOTHERMAL FREEZE FIXATION, WAS USED. FROZEN TISSUES WERE FIXED BY THIS PROCEDURE PRIOR TO BE EXAMINED BY SCANNING ELECTRON MICROSCOPY OR LIGHT MICROSCOPY. THE EFFECTS OF ICE CRYSTALS COULD BE OBSERVED. THE EFFECT OF FROZEN STORAGE ON BIOCHEMICAL PROPERTIES WAS EVALUATED TOO.
