Summary

The ultrastructure of peach (various cultivars) mesocarp cells was observed by TEM before and after cold (0 deg C) storage. The mesocarp cells of mature fresh fruits commonly had large vacuoles, the cytoplasm confined to a narrow layer adjacent to the cell wall. In cv. Dajiubao fruits after cold storage, the mesocarp cell walls were thickened, the cells deformed in shape and the plasmodesmata were reinforced; in addition, fruit flavour was insipid. These changes were not observed in cultivars Beijing 13 and Luhua.
