Summary
Air infiltration through the openings, namely entrance and exit for the delivery of the frozen foods, of the continuous quick-freezer has obvious negative influences on energy saving, the performance of the processing equipment, the manufacturing environment, and the quality of frozen foods. The basic characteristics of air infiltration through the entrance and exit of the quick freezer as well as the influence factors were investigated experimentally by virtue of the developed technologies of visualization and measurement. The results showed that air infiltration through openings of the quick freezer is a complicated phenomenon, which is affected by the temperature difference, the internal flow pattern, the sizes of the openings, etc.
