Summary

This article presents the results of an investigation on the storage life of frozen fish from the Baltic region (carp and sprats) depending on different preparation conditions, including the use of modified gas environment. The maximum cold storage times of the investigated foods were established and possible ways of using fish frozen in liquid nitrogen are recommended.
