THE DEVELOPMENT OF THE QUALITY OF TUNA FROZEN WITH VARIOUS PROCESSES WAS STUDIED. DATA ARE GIVEN FOR STORAGE LIFE, PRESERVATION OF FROZEN AND CANNED FOOD QUALITY. THE USE OF LIQUID NITROGEN FOR THE STORAGE OF TUNA IS SHOWN TO INCREASE STORAGE LIFE BY2.5 TO 3 TIMES AS COMPARED TO INDUSTRIAL PROCESSES. R.R.
