Study of the respiration rate of Belgian endive packaged in plastic films.

Summary
The purpose of the work was to determine the influence of temperature and gas (oxygen and carbon dioxide) concentration on the respiratory activity of endive. Respiration rate was sharply reduced when O2 levels fell below 10%. Theoretical gas concentrations inside different packages were calculated using a mathematical model. The results of experiments, performed to validate the model, were in good agreement with the model.
