Summary
The author provides a panorama of the literature on modified-atmosphere meat packaging and meat storage, and presents the sources of microbiological contamination, the various microorganisms that can appear in raw meat during storage and the factors that influence the colour of the meat. He also describes the aims of and the conditions applied in modified-atmosphere packaging of frozen meat. Microbiological changes, colour variations, quality and storage life of refrigerated vacuum-packed meat or of meat packed using gas preservatives are examined in more detail. The author then presents the proportions of gas preservative mixtures used in beef, mutton and pork stored under modified-atmosphere conditions.
