THE AUTHOR INVESTIGATES THE BASIC LINKS AND THE TECHNOLOGICAL REQUIREMENTS FOR SETTING UP A COLD CHAIN FOR AQUATIC PRODUCTS. THE ECONOMIC AND SOCIAL BENEFITS OF PRESERVING THESE PRODUCTS ARE EXAMINED WITH THE VIEW TO THE DEVELOPMENT AND APPLICATION OF A COLD CHAIN. SOME RECOMMENDATIONS ARE PUT FORWARD.
