Summary

Various varieties of apples (Elstar, Rubin, Sampion, Jonagold) were exposed to various controlled atmospheres (ranging from ultra-low oxygen atmospheres to normal air). Differences between varieties, in terms of firmness and organoleptic properties, were measured and reported.
