Summary

Apples are currently stored in ultra low oxygen (ULO) conditions, which guarantee high quality produce after long term storage. However, the oxygen content in ULO stores is not optimal, since a safety margin is applied to avoid accidental fermentation. It is desirable to apply the lowest possible oxygen content for still better control of fruit quality. Application of this lowest oxygen content is possible by a dynamic control system, based on a feedback of early signs of fermentation (ethanol) in the ambient air and followed by oxygen injection.
