The effect of modified atmosphere packaging on the market quality of mixed vegetables for soup.

Summary

Two semipermeable polymer film packages (PD-961 Cryovac and OPP-35 RGP Proemba) and two modified atmospheres (2% O2 + 3% CO2 and 80% O2 + 20% CO2) conditions were studied. Packages were stored at 4 °C for 13 days. Changes in CO2 and O2 concentration levels within packages, pH, °Brix, exudate, texture and market quality deterioration (appearance and flavour) were evaluated. The first film (PD-961) with the low O2 gaseous mixture allowed a considerable decrease in the spoilage symptoms and stability preservation with lower exudate and off-flavours in all samples for a longer period.
