Summary

Potatoes with an applied load of 196 N (20 kgf) were stored at 7 °C for 60 days. The sugar content, invertase, UDP-glucose pyrophosphorylase and sucrose 6-phosphate synthase levels were measured at intervals during storage. Static loading increased the glucose, fructose and reducing sugar contents, as well as the invertase activity of potatoes during storage. The reducing sugar content of static loaded potatoes was correlated with the invertase activity.
