Summary

This literature review describes the effects of storage at 4 deg C for 48 hours on the microbiological quality, viscosity, pH, chemical compostion, lipolysis and proteolysis of milk. The effect of storage conditions is significant for lipolysis and proteolysis. Bacterial and enzyme activity is greater in the milk after storage than in raw milk.
