The influence of weather conditions during growing season and storage temperature on processing quality of potatoes.

Summary
Dry matter and starch content depended mostly on a genotype. Reducing sugars content was determined by a variety of factors but the climatic conditions in the last part of the growing period were important. Sugar content and French fry colour depended mostly on storage temperature. Discoloration of tuber flesh was a varietal character. The Arkadia, Mila, Agria, Saturna and Panda cultivars were suitable for storage at 4 °C because their reconditioning successfully decreased reducing sugar content.
