The IUFoST Founders Lecture - Food safety: elusive goal and essential quest.
Author(s) : HALL R. L.
Type of article: Article
Summary
Consumers are fearful of involuntary risks such as those from blood additives and pesticide residues, but such risks are low because of past effort towards evaluation and control. Microbiological and nutritional risks are the largest risks but are primarily under individual control and hence are voluntary risks. They are dealt with effectively by three words: sanitation, variety and moderation.
