Spanish translation of the first IIR informatory note on food (see IIR Bulletin, ref. 98-0903). The purpose of this note is to tell how refrigeration can improve everyone's diet, both quantitatively and qualitatively. The note describes: reducing postharvest losses; improving food safety; improving food supply to the cities; benefitting from international trade (foodstuff imports, exports of high-value-added produce).
