Summary

A CENTRAL KITCHEN EQUIPPED FOR THE COLD LINK (PREPARATION, COOKING, THEN QUICK CHILLING AND STORAGE OF PREPARED MEALS) WAS BUILT IN A SMALL RURAL BRITTANY COMMUNITY. IT SERVES BOTH THE DINING ROOM OF THE ELEMENTARY SCHOOL IN WHICH IT WAS INSTALLED AND, VIA A RELAY KITCHEN, THE RESTAURANT OF A NEARLY PRIVATE SCHOOL. THE WORK OF THE KITCHEN STAFF IS THUS SPREAD OVER A WHOLE DAY AND THE CENTRAL KITCHEN CAN ALSO BE USED FOR OTHER MUNICIPAL CATERING SERVICES: FOR A DAY ENTRE FOR CHILDREN DURING THE HOLIDAYS AND FOR ELDERLY PEOPLE THROUGHOUT THE YA.
