EXPONENTIAL CURVES SHOWING THE STORAGE TEMPERATURE IN TERMS OF STORAGE TIME ARE DRAWN UP FOR FRESH AND FROZEN FRUIT AND VEGETABLES. TWO CONSTANTS OF THE EXPONENTIAL EQUATION ARE USED FOR EVALUATING THE RELATIVE PRESERVATION OF THE PRODUCT AND ITS SUSCEPTIBILITY TO TEMPERATURE CHANGES.
