Summary

Vitamins, in particular vitamin C, play an important role in the human diet. Fresh fruit and vegetables are the main sources of vitamin C. Given the fact that their season is very short, it is necessary to preserve these products, particularly by freezing them. The aim of this study was to show the direct and decisive influence of temperature variations and storage time on ascorbic acid levels, and the resulting decrease in the nutritional qualities of frozen fruit and vegetables.
