THE SURVIVAL AND GROWTH OF LISTERIA MONOCYTOGENES IN SMOKED SALMON.

Summary

WHOLE SALMON AND PACKED, SLICED, SMOKED SALMON WERE INOCULATED WITH LISTERIA MONOCYTOGENES, THE FORMER BEING STORED AT 277 K (4 DEG C), THE LATTER AT TEMPERATURES OF 278, 281, 283 AND 288 K (5, 8, 10 AND 15 DEG C). BRINING HAD NO EFFECT ON THE BACTERIA, NEITHER DID TARS IN THE KILN. STORAGE AT 277 K SHOWED LITTLE CHANGE IN BACTERIAL COUNT OVER 17 HOURS. SMOKED FISH STORED AT 288 K SHOWED SIGNIFICANT GROWTH WHEREAS FISH STORED AT 283 K AND BELOW ONL O WW THERE WAS NO DIFFERENCE IN BEHAVIOUR BETWEEN FISH INNOCULATED WITH SCOTT A STRAINAND NCTC 11994.
