SEAFOOD CONSUMPTION IN THE USA IS 7 KG (15.5 LB) PER PERSON PER ANNUM OF WHICH SURIMI ACCOUNTS FOR 0.34 KG (0.75 LB) AND THIS IS GROWING AT 10 % PER ANNUM. JAPANESE CONSUMPTION OF SURIMI IS ABOUT 8.2 KG (18 LB) WHICH REPRESENTS 25 % OF THEIR ANNUAL CONSUMPTION OF SEAFOOD. VARIOUS TYPES OF SURIMI ARE DESCRIBED AND THE AVAILABLE FISH SPECIES TO MEET THE GROWING DEMAND ARE DETAILED. ALTERNATIVE USES FOR SURIMI PRODUCTS ARE DISCUSSED TOGETHER WITH A CONSUMER EDUCATION PROGRAMME. G.R.S.
