Summary

The paper presents the development of a continuous drum freezer used to freeze vegetable purée. A drum was connected to a refrigeration apparatus. Calcium chloride was used as a cooling fluid and circulated in the drum. Heat transfer between the fluid and the foodstuff was modelled. The influence of the calcium chloride temperature, thickness of the foodstuff, rotating speed of the drum and initial temperature of the food was tested.
