Summary
This paper describes the use of vacuum and bubbling cooling together to cool water. The scheme of the test bench to investigate this process and the results of the tests on cooling 20 l of water from 30 to 5°C at vacuum cooling with bubbling as well as without it are cited. It is shown that bubbling of free air into water intensifies the cooling process. The vacuum-bubbling method of liquid cooking gives the possibility to obtain cold water at zero temperature.
