Summary

Software tools have been developed to “build” representative time-temperature profiles representing the food cold chain (Cold Chain Predictor Software: CCP) and quantify the quality of refrigerated food products at different stages of the cold chain (Quality, Energy and Environmental Assessment Tool software: QEEAT). The two software tools have been developed in the framework of FRISBEE Project (www.frisbee-project.eu) and are designed to use cold chain information and data that are available in the publically available Cold Chain Database (www.frisbee-project.eu/coldchaindb). The objective of this work was to validate the application of the CCP software in combination with QEEAT software using as a case study vacuum packed cooked ham.
