Summary

Application of an optimized quality and safety assurance system for the chilled and frozen distribution of products requires continuous monitoring and control of storage conditions, from production to consumption. Time-temperature integrators (TTI) are inexpensive, active “smart labels” that can show an easily measurable, time-temperature dependent change that reflects the temperature history of a food product to which it is attached. As an example case study, a kinetic model for quality deterioration of frozen blueshark slices was used to select appropriate TTI in order to monitor the fish quality during frozen distribution. A UV activatable photochromic TTI and an enzymatic TTI were kinetically studied and the influence of the level of activation or the concentration of the enzyme on the response of the TTI was modeled. The TTI response was tailored to monitor the shelf life of the product during the cold chain storage.
