Summary

THERMOPHYSICAL PROPERTIES OF FRESH AND FROZEN STRAWBERRIES AT NORMAL INDUSTRIAL STORAGE TEMPERATURES WERE DETERMINED BY DIFFERENTIAL SCANNING CALORIMETRY. THE PROPERTIES OF FROZEN STRAWBERRIES PRESENT SMALL CHANGES AND THE VARIATIONS CAN BE NEGLECTED IN PREDICTING EQUATIONS OF THE PARAMETERS TO DETERMINE THERMAL BEHAVIOUR, IN ORDERTO OPTIMIZING THE PROCESS VARIABLES.
